Peanut Butter Balls

Ingredients

  • 2 cups creamy peanut butter 16 oz jar
  • 1/4 cup unsalted butter or margarine or coconut oil
  • 1/2 teaspoon pure vanilla extract
  • 2 - 2 1/2 cups confectioners sugarChocolate Coating
  • 1 12 oz Package semi sweet chocolate chips
  • 1 1/2 TBSP margarine or coconut oil

Instructions

  • Melt together 2 cups peanut butter and 1/4 cup butter or coconut oil in a large microwave safe bowl. Microwave on high for 30 seconds then stir.
  • Mix in 2 1/2 cups powdered sugar and vanilla until dough forms.
  • Roll dough into 1 teaspoon size balls and refrigerate them or freeze them until the are stiff.
  • In another microwave safe bowl melt together 1 bag of semi sweet chocolate chips and 2 tbsp margarine (again I used coconut oil and it turned out fantastic!) I did this in the microwave for 30 seconds. Stirred, then returned to the microwave for another 30 seconds until fully melted.
  • Dip the cold peanut butter balls in the chocolate and place them back on the wax paper.
  • Refrigerate until set and then serve.
