Grated Fresh Parmesan Cheese
Italian Bread Crumbs
Clean and trim artichokes.
Boil in a large pot of salted water for 40 minutes or until tender.
Preheat oven to 400 degrees F.
While artichokes are boiling, saute onions and garlic in 1 tbsp of olive oil until tender. Remove from heat and stir in bread crumbs, oregano, and cheese.
When artichokes are tender allow to drain upside down for 5 minutes.
Gently pull the leaves back and spoon in stuffing.
Place stuffed artichokes in a casserole dish and drizzle with olive oil and sprinkle with some more Parmesan cheese.
Cover with foil and bake for 20 minutes at 400 degrees F.
Remove foil and bake another 5 minutes.
