Cucumber Dill Chicken Salad

Say it ain’t so. August is here, and so the planning begins to get the kids ready for school. Every year I give you a set of brand new lunchbox recipes to help you on your way to an exciting lunch box. My kids love being my guinea pigs when it comes to new lunch recipes, because there are only so many peanut butter and jellies one kid can eat.

For those of you that have been following, I am working on getting Healthy. I am not so worried about weight loss (But it would be nice) but making my body in better shape. This cucumber dill chicken salad rocks! Not only is it full of protien and flavor, but I dare you to find something in it that is bad for you. The dressing is made with greek yogurt, not mayo. You can serve this on a bun, in a wrap, or with crackers. Any way you dish it up. It is fabulous!

Ingredients
  • 2 cups diced cooked chicken breast
  • 1 cup chopped seeded peeled cucumber
  • ½ cup plain Greek yogurt
  • ¼ teaspoon dill weed
  • 1 tsp lemon juice
  • Salt & Pepper to taste

Instructions
  1. Mix together all of the ingredients in a large bowl and serve on sandwiches, wraps, or crackers
