School starts this week, and I love to help my kids get their day started right with a yummy breakfast. We do the usuals around here; cereal, waffles, oatmeal, etc., but I wanted something to wow them! That is when I got this fantastic idea for a Breakfast Banana Split!

Think of all the flavors of a typical banana split, but with yogurt instead of ice cream.

I split my banana down the middle and put it in this little cardboard baking pan. I found them with the cupcake liners at the grocery store. Then I topped it with my kids favorite yogurt. You can use dairy free yogurt for this too.

Now it is time to top it off. The fancier the better. I added fresh pineapple, strawberries, pecans, and coconut. I then placed a small bowl of peanut butter in the microwave and warmed it for about 30 seconds, just enough to soften it. Then, I drizzled the peanut butter over the top and finished it off with a fresh cherry!

Breakfast Banana Split

Ingredients

  • Banana
  • 1 cup yogurt
  • 1/4 cup diced strawberries
  • 1/4 cup diced pineapple
  • 1/4 cup chopped pecans
  • 2 tbsp shredded coconut
  • 2 tbsp peanut butter
  • 1 cherry

Instructions

  • Peel and slice banana in half long ways. Place it in a banana split dish or disposable baking pan. Top banana with yogurt and then fruit, pecans, and coconut.
  • Place peanut butter in a small microwave safe dish and heat it for about 30 seconds until it is soft. Drizzle the peanut butter over your banana.
  • Finally top the entire thing with a fresh cherry.
