I have wasted my money so many times on store bought dairy free ice cream. My daughters are allergic to milk and we splurge on those fancy Coconut & Almond Ice Creams so that they can enjoy ice cream too! Don’t ask me why, but I never tried making it myself until recently! OMG! This Homemade Coconut Ice Cream is not only simple to make but so much better than store bought!
Now I will say that I have an ice cream maker. It isn’t a crazy expensive one, but perfect for occasional family use. It is really similar to this Hamilton Beach Ice Cream Maker. When you have been paying $5- $6 for a pint of dairy free ice cream a $29 ice cream maker for endless ice cream is a deal!
Now all you need is 2 cans of coconut milk, 1/2 cup sugar, 1 tsp corn starch, and vanilla. Shake the cans of coconut milk before you open them because they can settle when just sitting in the pantry. Mix all of the ingredients in a bowl. Once mix, pour into the ice cream maker and churn according to your ice cream makers directions. Mine takes about 20 – 30 mins.
This is mine after the kids all took a bowl. Still plenty left for later.
I think my favorite part of this ice cream is you can enjoy it just as plain vanilla, or you can mix in anything you choose. My kids have mixed in chocolate chips, chopped oreos, strawberries, and more. The sky really is the limit.
How does it taste?! OMG! I have never been a fan of the dairy free ice creams. They just don’t taste the same to me, but this! This is amazing! It is rich, creamy, and everything you want ice cream to be. Especially with the mix ins, I think this is more enjoyable than regular ice cream….and that is saying a lot.
So I figured it costs me about $3.25 to make an ice cream maker full of this Homemade Coconut Ice Cream (about 3 pints) instead of $5-6 per pint at the grocery store. That is a HUGE savings!!! I would make my own even if it cost more because the taste is so much better.
- 2 cans Coconut Milk
- ½ cup sugar
- 1 tsp corn starch
- 1 tsp vanilla
- Shake the 2 cans of coconut milk. Open and mix all of the ingredients in a large bowl. Pour the coconut milk mix into your ice cream maker and use it per ice cream makers instructions.
- Serve and store extra ice cream in an airtight container in the freezer for up to 2 weeks.
