“Mom!  What is for lunch?” 11:30 AM at my house everyday I hear that same series of words 3 times; once from each kid. LOL  Their little inner clocks tell them that it is time for food, and it is my challenge to find something healthy, interesting, and kid friendly.  There is not a great big cook book of kids lunch recipes…there needs to be…but I haven’t found it yet. Maybe I should make one?

I love thinking outside the box!  I try to feed my kids healthy but fun foods, and this is a genius idea!  Applewiches!  Just use the Apple as the bread and fill it with your favorite peanut butter, sunflower butter, almond butter, etc.  You can even make it a little fancier by rolling it in peanuts, raisins granola, and more. Get creative

Core the apple, you can peel it if you have a picky eater.  Use a firm apple; I used fiji apples. After you core and slice the apple place them in a bowl of water with 1 tablespoon of lemon juice.  The citric acid in the lemon juice stops the apples from turning brown. Then pat them dry and use them for your sandwich “bread”.  My kids love these! I know yours will too! Plus, they are Gluten Free & Dairy Free!

Don’t forget you can find more LunchBox ShortCuts right here.  I will be posting a new CREATIVE lunch box recipe every tuesday in August!

What a neat idea! I also love this for me as I don't always have my GF bread on hand but this way I could still have peanut butter.
