Italian Sausage & Potato Roast
It doesn’t take a rocket scientist to put a cheap meal together. I wanted to do something different. Something that would use what is on sale in a non-pasta dish. That is when I came up with this Italian Sausage and Potato Roast. You can have dinner on the table in 30 minutes with little effort on your part. That right there is enough to make me want to make this every night of the week. 🙂
I don’t have time to play in the kitchen every night. I love to cook, but with the kids and everything else we have going on. I just don’t have time to fuss around with dinner. This meal is simple. You basically just wash, and toss everything onto a pan. SERIOUSLY! I bought a loaf of Cuban bread, but you could even serve it with Homemade French Bread. It has just been too hot here for me to want to bake.
I wish I could describe the smell that filled my house! Oh, it was so good. My husband said it smelled like the fair, because of the sausage and peppers. The smell alone could have made a person hungry.
I have put together a small grocery list this week that you should be able to get at-least 2 if not 3 meals out of. Of course, I included the coupons you could use to maximize your savings. You can get this meal along with another for as little as $1.05 per serving!
Italian Sausage and Potato Roast
Italian Sausage and Potato Roast Printable Version
- 1 Package of Italian Sausage (about 5 links)
- 2 Bell Peppers (I use one yellow, one green for color)
- 1 Sweet Onion
- 1 lb Red potatoes (cut in quarters) about 4 potatoes
- 1-2 Tbsp Olive oil
- ¼ tsp oregano
- 1 tsp Garlic salt
- Dash of pepper
Directions
Preheat oven to 450 degrees.
Wash a cut Peppers and onions into strips. Wash and cut potatoes too.
Place all of the cut veggies onto a large baking sheet.
Toss veggies with olive oil and seasonings.
Cut sausages into 3 or 4 pieces per sausage. Place the sausage pieces on the pan with the veggies.
Place pan in the oven and bake for 30 minutes.
Remove and serve!
Makes enough for 4-6 people
This is a great meal. Fast and easy. I have done this meal on the grill to keep the house cool. Just use a double e-z foil pan. Works great and NO clean-up. Just put foil over the top and put on the grill for about 45 minutes.

I clicked over here from Org. Junkie’s Menu Plan Monday and I’m so glad I did! Plan A for dinner tonite fell thru and this was a quick and easy alternative that I had all the ingredients for. Except oregano. Who doesn’t have oregano? That would be me. I used garlic powder, dried parsley, salt and pepper. Oh, and a sprinkle of garlic pepper for good measure. It was so yummy!! Thank you so much! This one is definately going in the rotation.

I just came across this recipe and tried it for dinner tonight. It was absolutely delicious! I never know what to do with sausage except for in pasta or an onion and pepper sandwich. This is going into the meal rotation, often, that is for sure! I served it with oven roasted corn on the cob. Wonderful recipe!
