
Sorry I am late today! This is going to be the usual for the next few weeks. Don’t expect your meal deals until Thursday night. There is one perk though. All the meals for the next few weeks will be quickies! I am going to try for the fastest meals, with the easiest preparation.
We have soccer practice on Thursday nights and I thought that it would be a great challenge for me. No drive through! No chicken nuggets! If I have time to do a home cooked meal on soccer practice night with 3 kids under foot, You can too!
This week the Ground Chuck is on sale for $1.99/lb at Publix. So I knew right away what my main ingredient would be. Plus, there are such good coupon match-ups. I will give you guys a shopping list at the end of the post with coupon match-ups for the greatest savings!
Here is what we had tonight!
Spanish Rice Dinner
- 1 pound lean ground beef
- 1 medium onion, chopped
- 1/2 green pepper, chopped
- 1 tbsp minced garlic
- 1 cup uncooked rice
- 1 (15 ounce) can diced tomato
- 3/4 cup hot water
- 1 teaspoon chili powder
- 2 teaspoons salt
- 1 teaspoon sugar
- pinch of oregano

DIRECTIONS
- In a skillet, brown beef, onion, green pepper, garlic.

- Add rice, Water, Tomatoes, and spices;
Mix well!

- Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until the rice is tender.

- Dinner is served!

I served with Crescent Rolls and a salad! More than enough for 4 people!
