“Snack”urday: Christmas Brownies

I had good intentions yesterday!  Seriously,  got the ingredients out for a microwave Pecan brittle and followed the instructions to a T.  Apparently my microwave is like 10 times more powerful than the one they used when the recipe was developed, because I had burnt sugar smoke pouring out of my microwave. By the time I got it cleaned up, I figured you would understand if I saved my kitchen adventures for today.

Now today I felt good about heading into the kitchen again.  The smell of the burnt sugar had dissipated, the kitchen was clean, time to get busy! I am trying to stick with Christmassy goodies and these Christmas brownies are not only easy, but they do the trick.  Not to mention they are gorgeous on a cookie tray!  I highly recommend you make a pan now!

CHRISTMAS BROWNIES

  • 1 box brownie mix
  • 1 bag white chocolate chips
  • 1/2 to 3/4 cup crushed candy canes (about 4)

Make brownie according to package instructions.

Allow to cool completely.  Make sure brownies are loose from the pan.

Melt 1 cup white chocolate chips in microwave for 1 minute at 70% power.  Stir and spread over brownies with spatula.  If you need more chocolate or just want more.  You can melt another cup and repeat.

Sprinkle crushed candy canes over the top and allow to set.  Or you could do like I did and pop it in the freezer for about 10 minutes.

Remove from pan, cut and serve.
