Burrito Pinwheels

Christmas time means guests, and for some reason they always show up hungry! 🙂  So, you need to have something on hand that you can pull out and serve without panicking in the kitchen!  This is that recipe! These Burrito Pinwheels can be thrown together in minutes and refrigerated or frozen so they are ready to serve!

My mom shared this recipe with me and I am glad she did!  I am an improviser, not because I want to but because I am typically not prepared! So, the recipes said to garnish these with fresh cilantro or lime slices.  Well, guess who didn’t have either one in the fridge?  But it did have some fresh lettuce which really made these pop!

Pull out these ingredients and roll up a batch of these today!  You won’t be caught without food to serve this Christmas!

Burrito Pinwheels

  • 1 package flour tortillas
  • 2 cans refried beans
  • 1 8oz package cream cheese
  • 1/2 small can green chilies
  • 1 small can sliced black olives
  • 4 oz medium salsa
  • 8 ounces shredded cheddar cheese or Monterey jack

Mix all of the ingredients except tortillas.

Spread evenly on the tortilla and roll up the tortilla.

Wrap and Refrigerate for atleast an hour.

When ready to serve slice into 1/2 inch slices and top with fresh cilantro or lime slices.

To me these are like a seven layer dip all wrapped up in a tortilla bite! Delicious!

*Gluten Free* You could wrap these up in corn tortillas!  Just keep in mind that corn tortillas fall apart easier than flour tortillas.
