Ok, so the filling of these tomatoes is crazy simple to make, I love this stuff on crackers too. It is so good! It has finely diced cucumber, green onion, mayo, cream cheese, dill, salt, and pepper. That is it. It is HEAVENLY!
You just cut the tops off of the cherry tomatoes. Give them a little squeeze over the trash can or a bowl to get some of the insides out. Then take that creamy filling you made and put it in a plastic zipper bag. Cut off the tip with some sharp scissors and pipe the filling right into the tomatoes. When they are on the plate sprinkle with a little extra dill.
I have even made the filling ahead of time and just kept it in the fridge. When company pops in you just fill your tomatoes and put them on a plate. It doesn’t get much easy or quicker for the holidays!
My kids even said that they almost look like little Santa hats, although I am not going to limit these beauties to one season. They are good all year long!
Creamy Cucumber Stuffed TomatoesPrint Recipe
- 24 cherry tomatoes
- 3 ounces cream cheese softened
- 2 tablespoons mayonnaise
- 1/4 cup finely chopped peeled cucumber
- 1 tablespoon finely chopped green onion
- 2 teaspoons minced fresh dill
- Cut a thin slice off the top of each tomato. Gently squeeze to remove and discard pulp; invert tomatoes onto paper towels to drain.
- In a small bowl, combine cream cheese and mayonnaise until smooth; stir in the cucumber, onion and dill. Spoon or pipe into tomatoes.
- Refrigerate until serving.
