This is the first year that all 3 of my kids have their own, completely different, activities. The first year that I am juggling not 1, not 2, but 3 kids schedules on top of our already hectic life. This makes eating a home-cooked meal every night, a little challenging, but not impossible. Let’s face it, some nights you just want a pizza but we aren’t doing take out. I made a batch of baked potatoes. You can actually make baked potatoes in the crockpot so they are ready to go in the evening. You can totally bake the potatoes ahead of time.

Then comes the fun part. Turn your potatoes into mini pizzas. Spoon in some sauce, top with cheese, and pizza toppings ( I used pepperoni).  My go-to sauce is Prego Traditional. This stuff is always in my pantry! It has one of the best flavors out of all the store bought sauces out there! Prego really helps me get this meal on the table in minutes!

Pop those potatoes underneath the broiler for about 5 minutes or until the cheese is melted and bubbly and serve. That is it!

I can’t begin to tell you how good these are! All the flavors of your favorite pizza in a baked potato!  My kids devoured them!

Ingredients

  • 4 Baked Potatoes
  • 1 Cup  Prego Traditional Pasta Sauce
  • 1 cup shredded mozzarella cheese
  • Pizza toppings pepperoni, mushrooms, etc

Instructions

  • Bake your potatoes. Split the potatoes down the center and fill with Prego Pasta Sauce, top with shredded mozzarella cheese, and pizza toppings.
  • Place under the broiler for about 5 minutes or until cheesy is melty and bubbly.
  • Serve.
