Weekly Meal Deal: Tomato Artichoke Chicken (Crockpot)

Ever since Hamilton arrived the other day I have been dreaming up crock-pot deliciousness! Who is Hamilton?  Oh, that is my new crockpot.  Yes, I have an old reliable crockpot, but there is something about my new programmable, stainless steel 6 qt crockpot that I just love!  I am such a kitchen geek!

Anyway, we have crockpotted 2 days in a row at my house, and we may go for 3 tomorrow.  There is nothing like the ease of throwing all the food in it in the morning and knowing it will cook and be waiting for you when you are ready!  No fuss, no mess…just food!

Spur of the moment, I went around and gathered ingredients for tonight’s supper.  I am trying to use up some of my stockpile foods instead of buying too much this week.  I have plenty of canned goods, and just bought chicken this last week at Winn Dixie when it was BOGO.   Hmmm….what if….?  That is how most of my recipes start.  I have no clue how it will turn out, just a hunch that if it does turn out, it will be delicious. It doesn’t hurt to use the kids as Guinea pigs. :)

Here is my what if dinner, and by the way it is hearty, filling, and just down right good!  As my kids would say, “You could serve this at a restaurant.”

Tomato Artichoke Chicken

Tomato Artichoke Chicken Printable Version

  • 2-4 Boneless Skinless Chicken Breasts (Depending on size)
  • 1 14oz can Diced Tomatoes with Garlic and Onion
  • 1 Can Artichokes in brine (not marinated) drained
  • Some Roasted Red Peppers (optional)
  • Basil
  • Oregano
  • 1 tsp minced garlic

Directions

Place chicken breasts in crockpot and top with tomatoes, drained artichokes, roasted red peppers, basil, oregano, and garlic.

Cook on High for 4 hours or low for 7-8 hours.

Serve over pasta or risotto.

Serves 4-6 depending on how many chicken breasts.

This week was another stockpile week for me.  Here is the average cost breakdown for you.

  • Chicken Breast $2.19/lb (about 1.5 lb)
  • Can of Diced Tomatoes $1 or less
  • Can of Artichokes $1.50
  • Pasta (I don’t pay more than $0.25 box after sales and coupons)

Roughly $6.04

Divided by 4

$1.51 Per Person!  That is my kind of crockpot meal!

I love the convenience and ease of a crock pot but always wind up using the same old recipes over and over again. This one looks delicious and it will probably be one of my family’s meals this weekend. I have everything but the artichokes. Thanks for sharing!

Ok, I have a confession. I am 30 years old and have never eaten an artichoke, except in dip at a restaurant. This looks great!

Yep…I opened a jar and put extra on my daughters. I just used a plain tomato basil and it was really good!

I make something similiar but with no red sauce and I use feta cheese and chicken broth it’s delicious
