I am just a girl that loves food, but the calories don’t love me so much. Eating healthier is no joke. I love bread, baked goods, and everything that comes with them. So when I find a substitute that tastes good and that is healthy I am all over it! Hello, 2 Ingredient Pancakes. You are my new best friend!

I started doing the 21 Day Fix about a month ago. It is super motivating to get my booty in gear, and I have been watching what I put in my body. If I eat it, I need to work it off. I have found that I sit a lot during the day with working from home and homeschooling, so there has been some effort put into moving more and eating less.

So the 2 ingredients in this recipe are eggs and banana. THAT IS IT! Crazy, isn’t it. Who would have guessed that these two things could make a pancake?! Just put two eggs and a banana in your blender and let it whirl.

I let it blend for about 1 -2 minutes until everything is beat together and it is a bit frothy.

Pour your batter on a hot griddle just like a traditional pancake. Cook it for a minute or 2 on each side until golden brown.

Now enjoy! It’s just that easy! These pancakes have a natural sweetness from the banana, and I am happy with them with just a bit of fruit and no syrup. Feel free to add a little maple syrup if you want.

Ingredients

  • 2 eggs
  • 1 medium banana

Instructions

  • Place ingredients in a blender or food processor and beat them together for 1 -2 minutes or until well incorporated and frothy.
  • Pour onto a hot griddle and cook for 1 -2 minutes on each side until golden brown.
  • Serve
