When A Few Shortcuts was born in 2009 this dinner idea was one of the first that I shared. Not only is this One-Skillet Spanish Rice Dinner quick and easy to make, but it is also affordable! It is still a classic dinner at my house that we all love!
How to Make One-Skillet Spanish Rice Dinner
This recipe is so simple. It reminds me of those boxed hamburger helper meals; Except ten thousand times better.
In a large skillet brown your ground beef, peppers, and onions all at the same time. You can make this meal even faster by pre-browning your ground beef. I tend to do this when I buy it in bulk and freeze it already browned. It makes dinners like this so much faster.
Once the beef is browned and the peppers and onions have cooked down a bit stir in the rest of the ingredients. Bring to a boil, then reduce heat, cover and simmer for about 20 minutes. That is it!
What to serve with One-Skillet Spanish Rice Dinner
This is a family favorite because it is a self-contained meal. It has meat, rice, and veggies in one dish. I do like to serve it with a side salad, and some fresh bread or crescent rolls. This Homemade French Bread is amazing with this dish.

This dinner can easily be doubled! In fact, I recommend it! This Spanish Rice Dinner makes excellent leftovers to be reheated for lunch, or use it as filling for some yummy stuffed peppers later in the week.
One Skillet Spanish Rice Dinner
Ingredients
- 1 pound ground beef
- 1 onion medium, chopped
- 1/2 green pepper chopped
- 1 tbsp garlic minced
- 1 cup rice uncooked
- 15 oz diced tomatoes canned
- 3/4 cup hot water
- 1 teaspoon chili powder
- 2 teaspoons salt
- 1 teaspoon sugar
- 1 pinch oregano
Instructions
- In a skillet, brown beef, onion, green pepper, garlic.
- Add rice, Water, Tomatoes, and spices Mix well! 🙂
- Bring to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until the rice is tender.
- Dinner is served
