Caramel Mocha Iced Coffee Popsicles
A grown-up sweet treat for when it is hot outside. Try this simple Caramel Mocha Iced Coffee Popsicles Recipe for a little afternoon pick me up.
Summer vacation is here and the kids are having all kind of sweet treats: Ice Cream floats, shakes, and popsicles. I love stealing a treat with them from time to time, but I wanted some treats of my own! So I made these Caramel Mocha Iced Coffee Popsicles.
These are so simple! I got my popsicle maker (which I am pretty sure is the best ever), strong coffee, and my International Delight of course. You can pick your favorite ID flavor. Plus, mini chocolate chips (not pictured). After I started I decided this needed chocolate. 🙂
I chose Vanilla Caramel Creme this time, but there are several yummy International Delight Flavors that would be amazing in these. I love the new International Delight logo. Look for it when you go to the store. I have seen it on a couple flavors so far. I love the new packaging!
Mix 3 cups of strong coffee with 1 cup of International Delight Creamer and fill your popsicle molds. If you are like me, you should have just enough left to pour into a glass for a nice iced coffee! Now, is when you sprinkle a few mini chocolate chips into each one because….they just needed some.
Now put the sticks in and freeze. I did this overnight to make sure they were good and frozen. These make the perfect treat for those hot summer afternoons!

- 3 cups strong brewed coffee
- 1 cup International Delight Vanilla Caramel Creme Creamer
- 1/2 cup mini chocolate chips
Instructions
- Mix together the coffee and International Delight Creamer.
- Pour into a popsicle mold.
- Drop a few mini chocolate chips into each popsicle. Place sticks and freeze overnight.
- Enjoy
