Nilla Wafer Cake
There is something about baking that is almost therapeutic to me. I love being in the kitchen knowing I am creating something that has been made for generations from the same recipe. Something that makes your house smell like home. Something that can be enjoyed over a cup of coffee and a chat between friends. It makes me feel like I am really doing something amazing.
Every time I am in the kitchen I am doing something special. I am creating a sense of home for my children. Memories of smells, tastes, and sights that they will have for a lifetime. I am also sharing tradition and passing down well loved recipes that will hopefully be made by my children and grandchildren in their own kitchens. To me baking is a way of passing the torch. I thoroughly enjoy every minute I spend in the kitchen baking, now….cleaning my mess….that’s another story. 😉
I wanted to make a special treat for Father’s Day. I wanted to pass on a recipe that could be a tradition in your home. This cake doesn’t get made often, but it sure is a winner. It is so simple to make from stockpile items. It is moist, tasty, and mouth watering delicious. Bake one up for dad this weekend. He is sure to agree.
Nilla Wafer Cake
Nilla wafer cake Printable Version
- 6 Whole Eggs
- 1 Cup Sweetened Flaked Coconut
- ½ cup milk
- 12 oz box of Nilla Wafers
- 2 cups Sugar
- 1 Cup Chopped Pecans
Directions
Preheat oven to 350 degrees
Grease and Flour a Bundt pan
Beat eggs well in a large bowl.
Crush Nilla wafers. I used my food processor, but you could just use a bag and rolling pin.
Mix wafers and all other ingredients into the eggs.
Stir until well incorporated.
Pour batter into Greased Bundt pan.
Bake for 50-60 minutes or until toothpick inserted in center comes out clean!
Now, I just need a cup of coffee and I am one happy girl! Hope you all have a super weekend!

I love you description of cooking. That is how I feel about my cooking and my housework. I don’t even mind the cleaning up. I love for my husband to come home to a house that is clean and smells of wonderful things.
Could this be done without the coconut? Would I need to add anything else?

Anyone know what adjustments would need to be made if you add 1 cup of mashed bananas? Would you need to add some flour?
