“Snack”urday: Strawberries and Cream Gooey Butter Cakes

“Snack”urday is back!  I am going to have to exercise a little bit more with these babies in the house!

When I was newly married I fell in LOVE with the Food Network.  I watched it all the time!  I remember when Paula Deen first started, she was like my new hero!  She has some of the best recipes.  One of my favorites is for her Gooey Butter Cakes!  I think I love it so much because you can adapt the recipe to almost any flavor!  I have made the Double Chocolate Gooey Butter Cakes and I don’t think that they lasted very long in my house!  You can find the base Gooey Butter Cake Recipe on the Food Network Website, or just from a web search.

Being a Florida girl, I love strawberries.  It is Strawberry season in Central Florida, and I am finding Strawberries everywhere.  This is one of my favorite Gooey Butter Cakes that I adapted from Paula’s Recipe!  I hope you guys enjoy them as much as we do!

Strawberries and Cream Gooey Butter Cakes

Cake

  • 1 Box Strawberry Cake Mix
  • 1 egg
  • ½ cup (1 stick) melted butter

Filling

  • 8 oz. package cream cheese softened
  • 2 eggs
  • 1 tsp. vanilla
  • 16 oz. pkg confectioners’ sugar
  • ½ cup (1 stick) melted butter

Directions

(1)   Preheat Oven to 350 degrees

(2)  Lightly grease a 13×9 baking dish

(3)  In a bowl mix cake mix, eggs, and melted butter until dough forms.

(4)  Pat mixture into the bottom of the 13×9 pan; set aside.

(5)  Use your mixer and beat cream cheese until smooth; add eggs and vanilla.

(6)  Dump in confectioners’ sugar and beat well.

(7)  Reduce speed and slowly pour in butter.

(8)  Pour the finished filling onto the cake mixture and spread evenly.

(9)  Bake for 40 minutes

(10)                       Cool and cut into bars. Make 20 to 24 bars

Cooling can be optional! :) They Just don't look as nice.

    I made these yesterday and LOVED them! I am a Florida girl too, so when January/February rolls around I make all kinds of strawberry desserts with Plant City strawberries (the best!). Thanks for such a delicious and easy recipe!

    I stumbled upon this recipe through I heart Publix on FB. Well, needless to say my entire family was hooked! These are so amazing and gooey, and so easy to make. We are all dieting again for the new year but when we take a cheat day this will be our staple-yummmm-Thanks!!

    Have you thought of how to make this recipe GF? I wondered if you could make a yellow/white cake mix recipe and add some strawberry jello to it… would that equate to a strawberry cake mix that is in the recipe. I would love your thoughts on this one.
