The Easiest Gluten Free Strawberry Cake Recipe

Gluten Free Strawberry Cake

I can’t say that I have done this often, but I just blew my own mind with this recipe. I have been trying to figure out a SIMPLE Gluten Free Strawberry Cake for YEARS! Then the other day it just came to me. One of those lightbulb moments. Call it divine intervention, or a small miracle from above. I just call this the easiest gluten-free Strawberry Cake and it is delicious!

So my secret ingredient. Strawberry Jello! Not only does it give the cake a great strawberry flavor but it helps the cake stay incredibly moist and keeps it from being crumbly like some gluten-free cakes can be. I used my Homemade Vanilla Cake Mix Recipe and just added a 3 oz box of strawberry jello.  I then followed the regular instructions to mix up the cake. No additional liquid is needed.

Dairy Free

I realize that when people go gluten-free they are often dairy-free or even egg-free. The cake mix recipe I linked to above is super easy to make dairy-free too! There are also several store-bought mixes that are dairy-free or offer dairy-free instructions.

I do not have a lot of experience making egg-free/gluten-free cakes although I know it is totally doable. This is one time when I am going to tip my hat to the experts and send you off to google the best egg-free cake mix for you.

Baking & Decorating

Bake as a cake or cupcakes. I chose cupcakes this time because who doesn’t love a great cupcake?! They are even better with these cute cupcake liners and sprinkles from Sweets and Treats.

Gluten Free Strawberry Cupcakes

Frost with whatever kind of frosting you love, but I recommend this Simple Strawberry Buttercream Frosting! YUM! Pink on Pink on AMAZING!

Ingredients

1 Gluten Free Yellow Cake Mix

  • 1 3 oz Box Strawberry Jello

Instructions

  • Follow the instructions on your Gluten Free Yellow Cake Mix to mix the batter. Add in the 3oz box of Strawberry Jello while you are mixing the batter.
  • Fill your pans and bake as directed.
  • Frost and serve.

    Thanks so much!!! My son always wants Strawberry Cake for his Birthday. I always watch while everyone else eats cake. So this year it’s a Gluten Free Strawberry Cake! Can’t wait to make. Thanks again.
