Raspberry Pecan Grilled Chicken Salad

We love grilled chicken for a delicious weeknight dinner. On nights when we decide to fire up the grill, I usually put a couple extra pieces of chicken on. It is a simple way to have extra for lunch or dinner the next day without having to cook. That is great for when it is really hot outside! One of my favorite things to do with that extra chicken is to brighten up everyones day with this simple Raspberry Pecan Grilled Chicken Salad!
So while my hubby is outside tending to the grill, the kids and I are together inside getting everything else ready. Mealtime is a family affair and everyone pitches in. It is time we disconnect from the outside world and create family moments that matter. We crank up some music and jam out while we prep and get things ready for supper. It’s important to make family togetherness fun and really live in the moment. When we are setting the table we can’t forget the drinks, and there is one thing that goes perfectly with these Raspberry Pecan Grilled Chicken Salads.
I nice ice cold glass of Lipton iced tea! In my pantry you will always find a box of Lipton iced tea. We are big tea drinkers here. There is always a pitcher in the fridge or one brewing.
Do you know the perfect way to brew a pitcher of tea? It’s so simple!
- Use 6 cup sized tea bags or 2 family sized tea bags per 2qts of boiling water.
- Steep (3-4mins)
- Sweeten to taste
- and add ice (6 cups of ice)
- Stir and refrigerate.
Don’t want to boil? You can cold brew too! Super simple!
- Pour 8 cups of cool water over 2 family sized tea bags or 6 cup sized tea bags.
- Cold brew 5 minutes dunking frequently
- stir
- then remove tea bags.
- Sweeten to taste.
- Add ice and ENJOY! Keep refrigerated.

- Lettuce of your choice
- 1/2 cup diced grilled chicken
- 1/4 cup of fresh raspberries
- 1/4 cup of pecan halves
- 1/2 cup diced cucumber
- 1/4 cup sugar snap peas
- Vinaigrette dressing of your choice
Instructions
- On your plate assemble your salad by placing a bed of lettuce or other tender greens.
- Top with grilled chicken, raspberries, pecans, cucumbers, and sugar snap peas.
- Finally drizzle with your favorite vinaigrette or other light dressing. I love this Apple Cider Vinaigrette!
