Rolo Popcorn Recipe : Simple Dessert Popcorn

When you are craving something sweet, crunchy, and chocolatey this Rolo Popcorn does not disappoint. Makes amazing gifts too!

Caramelly, chocolatey, popcorny goodness. This stuff is addictive and incredible in every way. This Rolo Popcorn is a delicious caramel corn drizzled with chocolate and little bits of those chocolate covered caramel rolos tossed throughout. Perfect for the holidays and makes the best gifts!

Supplies

popcorn, chocolate, butter, and other ingredients in glass bowls

To make this delicious popcorn treat you will need

  • popped popcorn
  • rolo candies
  • dark corn syrup
  • butter
  • brown sugar
  • vanilla extract
  • chocolate chips
  • baking soda & salt

How To Make

Preheat your oven to 225 degrees F. Line 2 large baking sheets with parchment paper and spritz with non-stick cooking spray. Divide popcorn between the two baking sheets.

In a medium to large saucepan, melt the butter over medium heat, stirring to avoid browning. Add the brown sugar, corn syrup, and salt to the butter.

Bring the syrup to a boil and then reduce the temperature allowing the syrup to boil for about 3 minutes or until a candy thermometer reaches soft-ball stage (238 degrees.) A candy thermometer is a must for this recipe.

Whisk in the vanilla and baking soda. This will cause a reaction that makes the syrup bubble up. Don’t panic!

Pour caramel over the popcorn, tossing to coat thoroughly.

Once your popcorn is coated, bake for 40 minutes, tossing halfway.

Remove the popcorn from the oven and lift popcorn from baking sheets using the parchment paper and allow to cool completely.

Once the popcorn is cooled, drizzle with melted chocolate and sprinkle with Rolo candies.

Allow the chocolate to set completely before packaging or serving.

Gluten Free

This recipe is naturally gluten free. Just make sure you are using a gluten free vanilla extract and double check your other ingredients for any hidden sources of gluten.

Storage

This can be stored in an airtight container at room temperature for up to 2 weeks.
