“Snack”urday: Monster Cookies (Gluten Free)

I had a couple different peanut butter desserts that I had in mind for this week, and then I received a comment from Becky M.  She left the link for this recipe from Paula Deen for Monster Cookies.  Now, I have made Monster cookies before, but they always include flour.  This recipe screamed “Make me!” because it includes NO FLOUR! My son can eat them and enjoy!

Any cookie that has Peanut Butter and M&Ms is already on it’s way to being great anyway.  These are super easy to mix up, and it makes a huge batch!  I am tossing some in the freezer for a rainy day…ok, a day I don’t feel like baking.

Take a jar of the cheap/free Peanut Butter from this week and make a batch of these Monster Cookies.  You will end up with a house full of little cookie monsters!

Monster Cookies (Gluten Free)

Monster Cookies Printable Version

  • · 3 eggs
  • · 1 ¼ cup packed light brown sugar
  • · 1 cup granulated sugar
  • · ½ tsp salt
  • · ½ tsp vanilla extract
  • · 1 (12 oz) jar creamy peanut butter (about 1 ½ cups)
  • · 1 stick butter or margarine (1/2 cup) softened
  • · ½ cup M&M’s candies
  • · ½ cup chocolate chips
  • · ¼ cup raisins (optional)
  • · 2 tsps baking soda
  • · 4 ½ cups Quick cooking oatmeal (Use GF Oats for GF Version)

Directions

Preheat oven to 350 degrees F. Line a cookie sheet with parchment paper.

In a VERY LARGE bowl, combine eggs and sugars. Mix well.

Add the salt, vanilla, peanut butter and butter. Mix well.

Stir in the chocolate candies, chocolate chips, raisins, baking soda, and oatmeal. See why I said you need a large bowl? LOL

Drop by tablespoons 2 inches apart on to the prepared cookie sheets.

Bake for 8-10 minutes. Do not over bake. Let stand for 3 minutes before transferring to wire racks to cool.

Store in airtight container.

Makes 3 dozen depending on size.

I am SO excited to make these!! My husband is gluten free and he misses cookies so bad. He’ll love these.

Since my husband and I were snowed in today, we made these. They turned out great. I think I would add more peanut butter, because we couldn’t taste it that well and we both love peanut butter.

I have a HUGE recipe for these. We make them every year right around Thanksgiving, or just after, and freeze the dough in quart sized freezer bags. We end up with about 20+ dozen cookies when all is said & done. It freezes VERY well, and (shh, don’t tell your kids!) the *frozen* cookie dough is even BETTER than the baked cookies!!! I’ll be glad to share the huge version of this recipe if you’d like, just shoot me an email! :)

(Oh, and talk about a BIG BOWL… hehe)
