- Ground Beef

Instructions
This dip is so simple to make! You will need to brown your ground beef and drain.
Tip: By ground beef in bulk and brown. Drain and freeze cooked crumbles in quart-sized freezer bags. It makes recipes like this and quick dinners (tacos, sloppy joes, etc.) even faster to throw together.
Place the ground beef, diced velveeta, salsa, and taco seasoning into a small slow cooker. I recommend one of the small dip pots, but any small slow cooker will do. Cook on high for two hours or until the cheese is melty.
Stir and serve with chips or veggies
Gluten Free
This dip is gluten free as long as you use gluten free taco seasoning. Serve with gluten free chips or veggies.
Serving
This dip is perfect for gameday, pool side, or any party. I love it for just a fun weekend with the family.
Obviously, this Cheesy Rotel Dip is delicious with Tortilla Chips, but also great with some cut-up veggies like small fiesta pepper (if you love fiesta peppers you should try this recipe too! )
I like to keep it in the small dip crockpot even for serving. It keeps the dip warm and gooey. Just set the crockpot to warm or low.
Storage
If there is any uneaten dip store it in the fridge in an airtight container. Microwave or return to the crockpot to reheat.

Ingredients
- 1 pound ground beef
- 10 oz Rotel tomatoes Original, undrained
- 16 oz Velveeta cheese Cubed
- 1 tablespoon taco seasoning
Instructions
- In a skillet over a medium-high heat brown ground beef
- Cut cheese into 1 inch cubes
- Add ground beef and cheese to crockpot
- Sprinkle on taco seasoning
- Pour Rotel tomatoes over it and stir to combine
- Cover and cook on high for 2 hours, or until cheese is hot and melted
- Turn down the crockpot to warm and serve
