Anytime I can make a meal that is full of clean ingredients and there are no dishes involved…I am in! These Chili Cheese Pepper Bowls are so much fun because you get to eat the bowl! My kids think that is the coolest thing ever, and so do I because there is nothing left to wash.

Here in Florida, it is Bell Pepper season. I love purchasing seasonal produce that is grown locally! I buy produce Fresh from Florida whenever I can.  Right now you can find Florida Bell Peppers at your local stores and restaurants.  You can also check out the Fresh From Florida sites to get great recipes updated with the seasons.

Wash and cut your Florida Bell Pepper in half from top to bottom. Scoop out the seeds and membranes so all you are left with is a little bowl.

Fill with your homemade or canned chili of choice. I love this Crockpot Chili Recipe. Then top with shredded cheddar cheese. Bake in the oven at 375 for about 20 minutes or until the cheese is melted and bubbly. This also softens the pepper just enough to make it tasty while still holding its shape.

Ingredients

  • 2 Florida Bell Peppers
  • 2 cups Chili
  • 1/2 cup Shredded Cheddar Cheese
  • Chili Powder

Instructions

  • Wash and slice bell peppers in half from top to bottom.
  • Scoop out the seeds and membranes.
  • Fill the pepper with chili and top with shredded cheddar cheese.
  • Bake at 375 for 20 minutes or until the cheese is melted.
  • Serve!
