The filling is made with cream cheese, cheddar cheese, and some seasonings. That is it! Just give the filling a whirl in your food processor or mixer and fill those peppers.

  • mini sweet peppers
  • cream cheese
  • shredded cheddar cheese
  • lime juice
  • cilantro
  • garlic salt

It is also helpful to have a food processor to mix filling.

Just substitute the same amounts. It really works well.  You can typically find both at your local grocery store or Whole Foods.

Tips

Sometimes piping the filling into the peppers can be difficult if the cream cheese is too cold. You can fix that easily by putting the filling in a microwave-safe bowl and heating it on high for 30 seconds to a minute depending on your microwave.

Give it a stir and if it is softened to better consistency, then put the cheese mixture in your piping bag and fill your peppers. This simple step makes a big difference in getting your peppers filled quickly and easily.

Ingredients

  • 12-18 Sweet Mini Peppers halved and seeded
  • 8 oz Cream Cheese softened
  • 8 oz shredded cheddar cheese or shredded Monterrey jack
  • 1 tbsp lime juice
  • 1 tbsp fresh cilantro
  • 1/2 tsp garlic salt

Instructions

  • Preheat your oven to 350 degrees F
  • Wash and slice the peppers in half long ways. Use a spoon to scoop out the seeds.
  • In another bowl mix together the cream cheese, cheddar cheese, lime, cilantro, and garlic salt.
  • Spoon or pipe the filling into each of the pepper halves.
  • Place in a baking dish and bake at 350 degrees for 20 minutes.
  • Serve warm.

    Sounds delicious! Do the peppers stay crisp and crunchy? My husband loves sweet peppers but hates when they get soft and won’t eat them. Maybe I could put them under the broiler to melt the cheese?

    Thank you so much, I went through about 30 or 40 recipes for these mini peppers and decided on yours. I cannot tell you how much everyone loved them. I took them to a pool party and they were gone within five minutes and I was very sad because I did not get to eat five more. I made them exactly as you said and they were delicious

    These were at hit at my Easter feast. I added a chipotle pepper and baked just long enough for the cheese to melt. Peppers were still slightly crunchy.
