Healthy Apple Cookies
A great snack option when your sweet tooth strikes! Try this yummy Healthy Apple Cookies Recipe that the whole family will love!
At around 3 pm my stomach starts to grumble for something sweet. I love nothing more than to grab a muffin or a cookie and a cup of coffee for my afternoon snack. However, this girl is turning a new leaf trying to eat healthier, and these Healthy Apple Cookies do a fantastic job taking down my sweet tooth!
Supplies
- apples
- peanut butter
- shredded coconut
- mini chocolate chips
- knife & cutting board
Instructions
Just core and slice an apple. I sliced my apple about 1/4 of an inch thick.
Give each apple a little spread of peanut butter. You can use any kind of buttery spread; almond butter, cashew butter, Nutella (not as healthy but good!).
Now sprinkle the tops with shredded coconut and mini chocolate chips. You could also add sprinkles or chopped nuts. Really these choices are totally up to you. I love the coconut chocolate chip combo because the final product totally reminds me of a Samoa!
Tips
A couple of these go a long way! I made one apple’s worth and I had 2 rings, my kids ran off with the rest. Oh, and I had to promise them I would make more. So my healthy apple cookies were a hit the entire way around!
Get creative with the toppings. Use different dried fruits, nuts, etc. The kids can have fun creating their own “cookie”.

Ingredients
- Apple – Washed Cored, Sliced 1/4 inch rings
- peanut butter
- mini chocolate chips
- shredded coconut
Instructions
- Wash core and slice apple into 1/4 inch rings
- Spread each apple ring with some peanut butter or almond butter
- Sprinkle the tops with shredded coconut and mini chocolate chips.
- Enjoy.
