You can’t go wrong with pizza. That should be some kind of life motto when you have no idea what is for dinner, or what to serve at a party. The only problem with pizza is that darn crust. Don’t get me wrong,  I love the crust, but my waistline doesn’t. That is why these Pepperoni Pizza Poppers are so genius.

All you need to make these is pepperoni, cheese, and pizza sauce. You can add sliced olives, fresh basil, or any toppings you choose. I am a purest when it comes to my pizza so I am sticking to the basics.

You are also going to need a mini muffin tin. Strangely I use this so much more than I ever thought I would when I bought it. If you don’t have one, get one. You will use it.

In each slot of the mini muffin tin place 3 pepperonis so that they overlap when you push them down in to form a cup.You can use the larger pepperoni slices and use just 1. If you choose to do that you want to put a couple slits on the side of the pepperoni so it folds better in the muffin tin.

Top each pepperoni cup with a tsp of pizza sauce and shredded mozzarella cheese.

Move the rack to the center of your oven and turn the broiler on high. Place these under the broiler for 3-5 mins depending on your oven. Watch them closely. You want the cheese to melt and get bubbly.

Remove the Pepperoni Pizza Poppers from the oven but leave them in the pan for about 2 minutes. This helps the pepperoni set.

Ingredients

  • 8 oz Pepperoni sliced
  • 1/2 cup pizza sauce
  • 1 - 2 cup mozzarella cheese shredded
  • Basil fresh, optional
  • black olives sliced, optional

  • Remove from oven and allow to sit for 2 minutes. Remove from pan and serve.

  • Make sure you are using a gluten free pepperoni.
