We are blessed with great neighbors, and one of my favorites just brought me a ton of fresh okra from her garden. I personally love fried okra, and I am not scared to try it new ways. After deciding to skip frying it this time I thought I would try it roasted and WOW! I am in love with Roasted Okra with a little bit of ranch dressing on the side.
How to Make Roasted Okra
I wish I had some fun story to tell with this one, or give you step by step instructions on a recipe. What can I say? This is simple to make with only Okra, a little olive oil, and s&p (salt and pepper). I have roasted it in the oven and in a cast iron skillet. It turned out so good both times. I think the only way you can go wrong is if you cook it a little too long and it gets mushy.
Since I have been trying to eat a little better (story of my life)…. “Quick, hide the cupcakes!” …I am trying to come up with ideas that taste like my favorites without killing me with calories. Fried Okra is one of my trigger foods. I can eat my weight in it. When you dip these Roasted Okra in Ranch, close your eyes and take a bite, it tastes pretty darn similar to those little fried bad boys.

Roasted Okra
Ingredients
- 1 lb Okra fresh
- 1-2 tbsp olive oil
- salt & pepper
Instructions
- Preheat oven to 425 or heat a cast iron skillet.
- Toss the okra with the olive oil and season with salt and pepper. Place on a baking sheet and bake at 425 for 10 minutes. Or sear them in your cast iron skillet over medium heat for about 5-10 minutes.
- When roasted serve immediately with some ranch dressing.
Try tossing lightly in olive oil salt and pepper and putting them on a skewer and grilling for a few seconds along with everything else you’re cooking…..no amount that you have will ever be enough!!! 😉
