    Flourless Peanut Butter Cookies

    In this house of allergic people I live in it is an every day (if not more than daily) occurrence to hear, "Can I eat that? What's in it?"  While it is entirely understandable that the kids are trying to make sure they do not eat something they are allergic to, it is exhausting.  It makes me feel so bad when I make something one of them can't have, but on the other hand, I always have an alternative on hand for the one that is left out.

    I have two kids with single allergies, and I just don't know how people manage that have children with multiple allergies.  I know they do succeed because parents always figure it out.  It is just hard in our society because everything revolves around food!

    So, imagine my delight when I found this recipe for Flourless peanut butter cookies that has no wheat and no dairy!  I about fell out of my chair.  They are so simple I almost wondered if the recipe would work when I first tried them.  To my amazement, these are the most delicious Peanut Butter Cookies!  You can't tell that they are flourless!  You could sell these at a bake sale, and they would disappear in minutes!  They are that good!

    Four ingredients.  That's it! 4 ingredients, and you will be in Flourless Peanut Butter Cookie Heaven!

    Ingredients
      

    • 1 cup Peanut Butter
    • 1 cup sugar
    • 1 teaspoon Baking Powder
    • 1 egg

    Instructions
     

    • Preheat the oven to 350 degrees
    • Cream the peanut butter and sugar in a bowl. This is much easier by hand.
    • Beat in the baking powder, and then stir in the egg. Mix until it is all combined well.
    • The dough will be sticky! Line a cookie sheet with parchment paper. Drop the dough by small tsps. onto the cookie sheet. The smaller these cookies are the better.
    • Sprinkle dough balls with sugar and use a fork to make the cross marks.
    • Bake for 10 minutes, or until cookies are golden brown around the edges.
    • Take the pan out of the oven, but let sit for at least 5 minutes before you try to remove the cookies from the pan. They will be fragile while warm.
    • Makes about 20 cookies depending on size!

    Just a regular tsp. I kept my hands clean too! You can just use your hands to roll them into little balls if you prefer.

    Take the pan out of the oven, but let sit for at least 5 minutes before you try to remove the cookies from the pan.  They will be fragile while warm.

    I wish I had a "add a smell" feature! These smelled so good, and tasted even better!

      do you have any other flourless cookies recipes ? Ive been searching online allweekend and cannot find any other than the peanut butter....would like tohave a variety if you know of any. thanks 🙂

      These flourless cookies are the easiest cookies known to mankind! AND to boot, they are so good, and are easy to mix, easy to drop onto pan, and cook in a flash. You can have warm peanutty goodness in just a few minutes. I have used all types of peanut butter ranging from Peter Pan, Skippy, Jif, and the natural styles. I have also used chocolate peanut butter, and it turns out pretty dang good as well. I would imagine that ANYONE smelling these divine morsels, in the oven will want to partake of them. (unless you're allergic to nuts, of course!) Try them, you will be pleasantly surprised at the ease of making and baking these sweet little cookies.

      I adore Peanut Butter Cookies & I'll be trying these tonight! I use the 3 ingredient PB Cookies. 1 Cup Sugar, 1 Egg & 1 Cup Peanut Butter. Stir, drop by spoonfuls, criss cross w/fork & bake @ 350 Preheated Oven for 12 minutes. Mmmmmmm
