Watermelon Bellini – A Perfect Brunch Cocktail

Planning the menu is half of the fun of hosting a brunch, and I can’t wait to share these Watermelon Bellini Cocktails with friends! These just wouldn’t be the same without Santa Margherita Wines
We all know that to make a good Bellini you need an excellent Prosecco. That is why I picked up a bottle of Santa Margherita Prosecco Superiore DOCG. The subtle complexity makes it perfect for this Watermelon Bellini!
You can learn more about Santa Margherita Wines and all of their varieties. These are so simple to make. Just puree some watermelon in the blender and add in a dash of sugar and splash of lemon juice along with a cup of the Santa Margherita Prosecco. Add about 1/4 cup of this watermelon puree to the bottom of your wine flutes.
Top it off with this Santa Margherita Prosecco, and you are one step closer to the perfect brunch!
Dress up each glass with a small slice of watermelon for a little-added zing. These are sure to be the hit of your Spring Brunch! One of my favorite things to serve at a brunch are these delicious Stuffed French Toast Muffins. They would be perfect with the Watermelon Bellini Cocktails.

- 3 cups cubed seeded watermelon frozen
- 2 tablespoons sugar
- 2 tablespoons fresh lemon juice
- 3 cups chilled Santa Margherita Prosecco Superiore DOCG divided
Instructions
- Place watermelon, 2 tablespoons sugar, lemon juice, and 1 cup Prosecco in a blender; process until smooth. Pour about 1/3 cup watermelon mixture into each of 8 glasses.
- Pour 1/4 cup remaining Prosecco into each glass.
- Garnish with a small slice of watermelon, if desired. Serve immediately.
