Ice cream is one of those desserts that can give immediate comfort. Whether it is cooling on a hot day or relaxation after a long day, ice cream is one of those go-to stress soothers that is just refreshing. This Copycat Ben & Jerry’s Cherry Garcia Recipe is simply divine. The vanilla base with cherries and chocolate chunks throughout is enough to make your tastebuds dance.

Supplies

To make this recipe, you need just a few ingredients and an ice cream maker. There are so many ice cream makers on the market now, and some are very affordable. Check your local thrift store too. They always seem to have them in the small appliance section.

  • Milk
  • Cream
  • Eggs
  • Sugar
  • Cherries (fresh or frozen)
  • Dark Chocolate chunks

Heat Milk

In a medium saucepan over medium heat, warm the milk and heavy cream to 140 degrees.

Beat Eggs

As the milk heats, in a separate bowl beat the eggs until smooth and creamy, about 3 to 5 minutes. Very slowly add the sugar to the eggs and beat until the sugar is dissolved.

Temper eggs

While beating the eggs and very slowly, temper the eggs by adding about ⅓ of the heated milk to the eggs. Then, whisk the egg mixture to the remaining milk in the pot.

Chill

Heat the liquid until 175 degrees, stirring often. Remove from heat and refrigerate overnight. If you are impatient…pop it in the freezer for an hour or so and check the temperature.

Basically, you want the mixture chilled so it freezes well in the ice cream maker.

Freeze

Pour the mixture into the ice cream maker and freeze according to the manufacturer’s instructions.

When the ice cream is almost completely set, stir in the chocolate and cherries.

Soft: If you like a softer consistency ice cream you can enjoy it right out of the ice cream maker.

Firm: For firmer ice cream, transfer ice cream to a freezer-safe container and freeze for 4 to 6 hours.

Gluten Free

  • 1 ½ cups sugar

  • Very slowly add the sugar to the eggs and beat until the sugar is dissolved.
  • While beating the eggs and very slowly, temper the eggs by adding about ⅓ of the heated milk to the eggs. Then, whisk the egg mixture to the remaining milk in the pot.

Notes

Note: Frozen or canned cherries can be substituted but should be drained first. One batch of ice cream was too much for the Cuisinart 2 quart machine, so I removed some of the ice cream as it froze and began overflowing.
