Gluten Free Peanut Butter Brownie Cookies
Gluten Free Cookies. Have you bought any from the store lately? Not really the most flavorful cookies in the world, unless you know the right ones to buy. That is why I make my own. These Gluten Free Peanut Butter Brownie Cookies will convert anyone to your Gluten Free ways. 😉
It has taken years of testing, baking, wasting ingredients and more to learn what works, what doesn’t, and what works but tastes like sawdust. Seriously….saw dust.
I tweaked my Flourless Peanut Butter Cookies (Another awesome recipe) a bit and turned them into these Gluten Free Peanut Butter Brownie Cookies. I made them yesterday and the whole batch is gone, so I am pretty sure that means they were good.
I love these because they are a simple, every body in the bowl, recipe. Toss all the ingredients in the mixer and let it whirl. You are looking for a thick brownie consistency.
Use a cookie scoop to drop the dough on a parchment lined baked sheet. Then use a fork to press the cookies down and make the classic peanut butter cookie pattern on the top.
Bake at 350 degrees for about 10 minutes.
Make sure you let them cool on the baking sheet for about 5 minutes before you try to move them.
Gluten Free Peanut Butter Brownie Cookies

- 1 1/4 Cup Peanut Butter
- 1 Cup brown sugar
- 1 Egg
- 1 tsp Baking Soda
- 1/2 cup cocoa powder
Instructions
- Preheat the oven to 350 degrees F.
- Mix all of the ingredients in a stand mixer until well combined.
- Drop by rounded teaspoonfuls onto a parchment lined baking sheet.
- Use a fork to press down the cookies and make the cross pattern on top
- Bake for 10 minutes.
- Allow to cool for 5 minutes on the pan before removing

This was the first time I have eaten gluten-free cookies. I made this recipe exactly as written and it was very easy. Taste wise they were chocolaty, peanut buttery and not overly sweet. The inside of the cookies had a kind of cakelike texture, while the outside was a little harder. I will be making these delicious cookies again! Thanks for the recipe!
