There is no worse feeling in the world than trying to eat healthier and feeling like you are starving. Been there, done that, have the t-shirt. I have decided that I will never feel hungry, even if it means not looking perfect. These Pulled Pork Stuffed Sweet Potatoes are a great option and will not leave you hungry!
I have been trying to eat better (story of my life) and cut out a lot of the junk. I guess you could say I am eating clean, or paleo, or whatever the newest fad is. Really I am just trying to not eat a bunch of processed stuff or sugar.
You guys, the struggle is real when it comes to potatoes. French fries, chips, baked, mashed…you name it, I will take 2 of them. 😉 I decided that I would cut back and try eating more sweet potatoes. They are supposed to be much healthier and full of vitamins.
To make a long story short. I made Pulled Pork in the crock pot, and instead of bread or potatoes I just put some of it down inside a baked sweet potato. OMG! It was like I invented the light bulb. That is a little bit of heaven that you are just going to have to try. The best part….I am full. Like honest to goodness, not craving anything else full.
Pulled Pork Stuffed Sweet Potato
- Pulled Pork
- Baked Sweet Potato
- Bbq sauce if desired
Open Baked sweet potato and fill with pulled pork. Top with sauce if desired and serve.
