My kids are at a fun stage in life. They aren’t tiny kids anymore, which is funny to say because when I started this blog in 2009, they were! My oldest daughter, who is taking college classes (crazy!), and I love to swing into the coffee shop together for a drink occasionally. Unfortunately, she can’t have dairy due to an allergy we have to skip a lot of the “fun drinks.” That led me to become an at-home barista, and I have to say that this is the BEST Vegan Pumpkin Spice Coffee Creamer recipe that we have tried!

The only ingredients you need to make Vegan Pumpkin Spice Coffee Creamer are canned coconut milk, pumpkin puree, some pumpkin pie spice, and a little bit of vanilla.  Canned coconut milk is the best one we have tried when it comes to recipes. I highly recommend it, but you can use almond milk, or whatever milk alternative works the best for you.

I want to start by saying if you aren’t vegan, don’t worry, I am not either, but this creamer is still AMAZING! You can also make this with full cream or half and half instead of Coconut Milk, and it would turn out just as fabulous.

I bought a little coffee frother at Ikea that I used to mix this up in a mason jar. You can also use a blender.  Use what you want for your coffee, and store the rest in the fridge until you are ready to use. I would imagine this would stay good for a week or two, but it never lasts that long around here.

This creamer is seriously out of this world amazing! We did not add any sweetener to it, but you could. I wanted to give everyone a chance to add the sweetness they like to their drink. Not everyone wants a super sweet creamer like some of those store-bought varieties. I have found that a tiny bit of maple syrup goes a long way and it adds just the right amount of fall sweetness to a Homemade Pumpkin Spice Latte!

We have also found the new cans of Dairy-Free Whipped Cream at the grocery store, and they are pretty much the best thing since sliced bread! So, take that coffee shop! We can now have our coffee dates at home with this yummy Vegan Pumpkin Spice Coffee Creamer, and they are incredible!

  • Mix together all of the ingredients with a blender or frother. Store in an airtight container (like a mason jar) in the fridge until ready to use. Pour in coffee, tea, or milk as desired.
  • Keeps for 1 - 2 weeks in the fridge. 

Notes

Non-Vegan

This can be made non-vegan by using half and half, or heavy cream in place of the coconut milk

    Great, simple recipe! I doubled the spice using my German Lebkuchen spice blend and, since I was making it for guests, I added 2 TBSP maple syrup. It was perfect…thanks!

    I followed all the instructions. I went to pull this out of the fridge to use this morning. The creamer was almost like a solid. I expected it to be more liquidy like store bought creamer. Did I do something wrong?

    1. Amber, it sounds like your coconut milk was a little higher fat. That is all. The Coconut fat solidifies at temperatures below 75 F. Just give it a shake or leave it on the counter for a little while and stir. It will also melt in a warm beverage. Enjoy.
