Sweet Potato Casserole…FINALLY!

So good! Every one enjoyed this!

OH I just love computers…..NOT!  I have had such issues today.  My computer wouldn’t let me post anything.  I finally have it fixed.  It turns out those cute little pop up social buttons at the bottoms of all my posts were causing my WordPress not to work.  SO, they are now gone!  Good riddance.   I will find new, better buttons, that don’t freeze my site!

So, here it is….late….but here.  My Sweet Potato Casserole Recipe.   Don’t worry, you will want to make this another day!  It is that good!

Sweet Potato Casserole

• 6 Medium medium sized sweet potatoes or 3 large
• 1/2 cup sugar
• 2 eggs
• 1 tsp vanilla
• 1/3 cup milk
• 1/2 cup butter
• 1/3 cup firmly packed brown sugar
• 1/3 cup finely chopped pecans
• 2 TBSP flour (You can use a GF Flour)
• 2 TBSP Butter

Directions

  • Cook Sweet potatoes in boiling water for 45 minutes to an hour or until tender. I wrap mine in aluminum foil and bake in the oven at 400 until cooked through….you’ll know when they are ready! Let them cool to touch. Peel and mash.
  • Combine the mashed sweet potatoes, sugar, eggs, vanilla, milk and 1/2 cup butter (softened) . Beat at medium speed in your mixer until smooth. Spoon into a lightly greased 13×9 baking dish.
  • In a small bowl combine brown sugar, pecans, flour and 2 TBSP butter; sprinkle mixture over casserole. Bake at 350 degrees for 30 minutes. Makes 8 servings.

*GFCF Variation*
There are just quick changes to make this GFCF. Instead of butter use a Dairy Free
margarine. You can omit the flour in the topping or substitute 2 TBSP Rice flour.

Hi Amanda! Thanks so much for sharing this classic dish as a Thanksgiving Favorite for our Gluten-Free Holiday event! Yours looks heavenly! Hope you’ll join us for the remaining weeks. :-) This type of recipe is exactly what I teach for my gfe approach … easily adaptable. ;-)

My mom is from NC and this is a family fav. She makes it the same way but adds a little orange juice to it (she got the idea from Cracker Barrel). It’s beyond incredible.
