BBQ Season is here and it is time to enjoy all of the tasty treats off the grill. One of the best parts is the fresh and delicious side dishes that accompany those evenings on the porch. This is the BEST Broccoli and Cauliflower Salad Recipe! I love it because no matter the food restrictions or who you are serving it can work for anyone! Great if you are eating low carb or KETO too!

Low-Carb Side Dish

Veggies are a low carb or Keto eaters best friend and this recipe doesn’t disappoint! There is tons of broccoli and cauliflower, and the dressing is not a game changer. Everything in this salad is KETO or low carb friendly. If you are trying to stay away from mayo switch it out for some sour cream. It is just as amazing!

Prep Ahead Tips

Everything in this salad can be prepped ahead. I think it is a little better if it has had time to sit in the fridge overnight with the dressing on it. This allows time for all of those flavors to soak into the veggies and really give them a great taste.

If you prefer you can just have the ingredients cut up and ready to go in one bowl and the dressing mixed up in a container. Store both in the fridge and mix together before serving.  These bowls are my new favorite! The lids make them super convinient.

Vegan Broccoli Cauliflower Salad

With all of those veggies why not make this vegan? You can simply switch out the mayo for a vegan mayo and omit the cheese. You could even replace it with a vegan cheese if you choose.

Ingredients

  • 3 cups broccoli raw
  • 3 cups cauliflower raw
  • 8 slices bacon cooked and crumbled
  • 1/2 cup onion chopped
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup walnuts chopped
  • 1 cup Mayonnaise
  • salt & pepper  to taste

Instructions

  • Add broccoli, cauliflower, bacon, onion, cheese and walnuts to a large bowl.
  • In a small bowl, whisk together mayo and apple cider vinegar.
  • Pour dressing over the top of the salad ingredients and toss to completely coat. Season with salt and pepper to taste.
  • Store in the refrigerator until ready to eat.
