Ingredients
All you need to make this gingerbread granola is …
- old-fashioned rolled oats (use certified gluten free if necessary)
- cinnamon
- ginger
- allspice
- nutmeg
- salt
- vanilla extract
- molasses
- maple syrup
- coconut oil
Instructions
Preheat oven to 350 degrees F. Line a large baking sheet with parchment paper and set aside.
In a large mixing bowl, add oats, cinnamon, ginger, allspice, nutmeg and salt. Stir to combine.
Once combined, add vanilla extract, molasses, maple syrup and coconut oil. Mix until all ingredients are incorporated.
Pour the granola onto the prepared baking sheet. Use a spatula to spread the granola, pressing to flatten it down slightly into an even layer.
Bake at 350 degrees F for 20-22 minutes. Remove from oven and cool before breaking the granola apart and serving.
Watch Out!!
Granola is one of those things that can go from not done to burnt quickly. Keep an eye on it the last 5 minutes and pull out early if necessary. Oven temps can vary depending on the manufacturer.
Gluten Free
I love this recipe because the only thing you have to do to make it gluten free is use Certified Gluten Free Oats. As always double check your other ingredients for any hidden gluten.
Vegan
This granola is naturally vegan so if that is a concern for you this recipe is safe.
Storage
Allow this granola to sit out on the counter for 1 hour or more before placing it in an airtight container. This allows it to harden, giving it a crunchier texture
Store in an airtight container for up to 3 weeks.
