Why are they Called Deviled Eggs?

They started using the term “deviled”, in reference to food in 1786. In the 19th century, it was used most often with spicy or zesty food, including eggs prepared with mustard, pepper or other ingredients stuffed in the yolk cavity. The name stuck and now we call them Deviled Eggs.

How long do Deviled Eggs Keep?

Refrigeration is key when eggs are involved. Once prepared, deviled eggs should be kept in the refrigerator immediately. The eggs should be consumed within two days, which is generally considered the maximum amount of time the eggs remain safe to eat when stored in the refrigerator.

If you are going to leave them out on the counter for a party or get together the maximum time considered safe is 2 hours.

How to Make Deviled Eggs?

Hard Boiled Eggs

These little deviled are so very easy to make! They are even easier and perfect if you have hard boiled eggs on hand (HELLO EASTER!)  The key to the BEST deviled eggs is boiling your eggs perfectly and not over boiling and ending up with that green tinge around your yolk.  These Instant Pot Hard Boiled Eggs are amazing for this!

After your eggs are perfectly boiled, you are ready to start preparing your appetizer. Slice your eggs in half lengthwise. Carefully scoop out the yolk to a small bowl, and smash it with a fork.  Place the egg white on a serving tray, they even sell trays specifically for these eggs.

In the bowl with the egg yolk add mayonnaise, dijon mustard, salt and pepper and stir it all together until creamy. Use a small spoon to scoop out some of the yolk mixture and place it back into the egg white or pipe it in for fancier eggs.

Sprinkle a little paprika for some added color and flavor and you are ready to serve these little devils to your guests.

Piping Filling

To pipe the filling spoon the filling into a piping bag fitted with a star tip. Carefully squeeze the filling right into each egg. This makes a beautiful presentation.

Ingredients

  • 6 eggs
  • 1 tsp mustard
  • 6 TB mayonnaise
  • salt & pepper 
  • paprika

Instructions

  • Place eggs in a pot of cold water and cover by 1 inch or so. Add a pinch of salt and cover with a lid.
  • Bring water to a boil on high heat. Once it has reached a boil, reduce heat to medium-high heat and boil for 6-7 minutes. When done, remove eggs from pot and pot in a bowl of ice water for a few minutes.
  • Peal and rinse eggs.
  • Carefully cut each egg, lengthwise, removing the yolk to a small bowl. Set the white of egg aside.
  • Add mustard and mayonnaise to bowl of egg yolks and whip with a fork. Salt and pepper to taste. Spoon mixture into the hole of each egg or pipe in. Sprinkle with paprika. Place in fridge until ready to serve.
