Creamy Strawberry Popsicles Recipe – 3 Ingredients

I love strawberries, and there is usually not a shortage of them in my fridge during strawberry season. Sitting down and eating a bowl for a snack is not unusual for me, and they are my go-to fruit flavor when I am coming up with tasty treats. There is nothing more refreshing than a popsicle on a hot day, and these Creamy Strawberry Popsicles are my new must-have! A blend of coconut milk, strawberries, and sweetener of your choice make these delicious, creamy, and healthy! If you are dairy free, vegan, or looking for a low or no sugar option, these popsicles are for you!

Low/ No Sugar Creamy Strawberry Popsicles

I am typically totally a sugar added kind of person, but I do realize there are those with medical conditions and those that choose to avoid sugar for health purposes. These Creamy Strawberry Popsicles are an ideal treat for you! Instead of adding sweetener when making the popsicles, you can replace it with your favorite artificial sweetener.

The other option is to replace 1 cup of strawberry with 1 cup of pineapple. The sweetness from the pineapple makes up for the lack of sugar, and you are substituting something all natural. It adds a great flavor too!

My kids are getting older, so I can honestly say I have been making popsicles a long time. We started with one of those cheap plastic molds. You know the ones with the built-in sticks in the lids. They work, but they aren’t the best. I have had this one for five years now, and it is holding up wonderfully! I recommend this to anyone. You will need popsicle sticks but they aren’t expensive, and to be honest, it is much easier to throw away the sticks then it is to try to clean those little lids.

Creamy Strawberry Popsicles

Total Time:4 hours 5 minutes

Ingredients

  • 3 cups strawberries sliced
  • 1 can coconut milk
  • 1/4 cup honey or sweetener your choice

Instructions

  • In a blender place strawberries, coconut milk, and honey. Puree on high until no chunks remain and the mixture is creamy. Taste for sweetness. If more sweetener is desired add.
  • Pour strawberry mix into your popsicle mold. Cover and insert sticks.
  • Freezer for a miniumum of 4 hours or until popsicles have hardened.
  • Serve and enjoy

Notes

No Sugar/ Low Sugar

You can replace the honey with any type of sweetener including an artificial sweetener. Adjust the amount depending on your taste and the sweetness of the fruit.
You can also substitute 1 cup of fresh or frozen pineapple for 1 cup of strawberries. This will add natural sweetness and no added sugar will be necessary.
